An early variety with middle long, green pod without fibrousness.
Pods are green, 180-200 mm long and stringless.

Bean soup (Cretan recipe).
Ingredients.
500 g dry white beans, 3 tablespoons tomato paste, 2 large finely chopped onions, 1 carrot, cut into thin rings, 1 celery root, cut into medium pieces, 1/2 cup olive oil (if you don't have celery on hand, you can substitute 2 bay leaves, a few cloves of garlic, and at the end add dry orange peel).
Preparation.
Soak the beans in salted water and let sit for 8 hours (or preferably overnight).
Drain and boil in a saucepan with 2 liters of water. Let the beans simmer for at least 10 minutes - this is very important as raw beans contain toxins. Drain the water, add 2 liters again and let the beans boil again.
Dilute the tomato paste in a glass of water. Add it to the beans, add the remaining ingredients, reduce the heat and continue cooking until the beans are soft.
Finally, add salt and pepper to taste.
This portion is designed for 4-6 people.
