A medium-early variety of leaf celery. The vegetation period is 80-90 days. The stalks are thick, fleshy, and 40-70 cm long. Grows best in heavy, humus-rich, well-tilled, but not wet soil.
Green Utah is a very popular American celery producing tall, delicious, string-less, well-rounded solid stalks which are easily blanched and have a distinctive nutty flavour.
This compact variety has excellent disease resistance.

Celery is used mainly as a spicy-flavoring plant in the form of an aromatic additive to various dishes. The most common is the leaf, less often the root, and only in recent years the petiole has begun to appear. Celery contains amino acids, glycosides, vitamins C, B1, B2, PP, E, U (anti-ulcer), asparagine, choline, acetic and butyric acids, forocoumarins, sugars, pectin substances, salts of potassium, calcium, magnesium, iron and other useful substances. The most valuable are leaf and petiole varieties, which are four times richer than root varieties in vitamin C, and forty times in carotene. In root celery, in terms of the amount of carotene and vitamin E, the leaves are five times richer than root crops. Both leaves and roots of celery are used in nutrition. The leaves are used limitedly in mixtures of salad crops, therefore, leaf celery has not received wide distribution in household plots, it is used mainly as a fragrant seasoning.
